If you buy rum regularly, you may also want to learn about its discovery. A crucial role in the history of rum was played by the discoverer of America, Christopher Columbus. He brought the sugar cane plant to the North American island of Hispaniola, thus making the Caribbean the birthplace of rum. However, the origin of sugar cane is unclear. The plant reached Europe via the Middle East as early as the 1st century AD. The plant was mainly cultivated in the Mediterranean region. Due to the popularity of sugar in the European region and the high yield from the sugar cane plant, it was cultivated on a large scale. For the cultivation and harvesting mainly slaves were used.

The most important about the ambassador of rum

The first large-scale distribution of rum beyond Caribbean borders was through the Royal Navy, the United Kingdom's navy. Various records show that as early as the mid-17th century, high-proof rum was distilled from sugar foam on the island of Barbados and drunk on French ships off the island of Jamaica. The Royal Navy, which was present there, noticed the lasting high spirits among the French enemy and decided to keep its own sailors happy in the future with the brandy, called "Kill Devil". Even today you can still buy Kill Devil rum. A century later, there was an official right among sailors to a daily ration of rum. In Europe, rum did not become more popular until the mid-19th century. This was mainly due to years of poor grain harvests and the resulting shortage of raw materials.

 

Rum - the accidental product from molasses

It was discovered by chance that a type of sugar wine could be produced from the by-product molasses. At the end of the 17th century, a spirit began to be produced from the alcoholic waste product. If you buy rum today, it is only remotely comparable to the brandy of that time. It wasn't until the following century that distilling methods were refined. On the one hand, the traditional pot stills gained more and more importance, on the other hand, the invention of the columnar Coffey stills revolutionized distillation. The continuous distillation process not only made the production of Irish whiskey possible, but also the production of rum.

Countries of origin of rum

When buying rum, the country of origin plays a crucial role as it strongly influences the taste and quality of the rum. Although each country is known for certain styles of rum, the flavors can vary from brand to brand. Here are the most important rum nations and their typical styles:

  • Cuba: Light, mild rum, ideal for cocktails such as mojito and daiquiri.

Before you can buy your favorite rum, some processes must be set in motion. For the production of rum you need mainly sugar cane plants. The molasses or freshly pressed sugar cane juice produced during sugar production is needed as the basic product. The molasses or sugar cane juice is fermented and the resulting mash is distilled once or twice. The basic ingredient sugar cane

The basic ingredient for rum is sugar cane. Depending on the soil conditions and climate, the plant grows for 9 to 24 months. The time of harvest depends on the sugar content of the sweet plant. This value is measured permanently. As soon as an optimal measured value is obtained, the sugar cane plant is cut by hand or by machine. Manual harvesting is of higher quality, because here the sugar cane tips and leaves can be removed more carefully - in the end you can buy the best rum. In a special sugar cane mill, the juice is pressed out of the sugar cane - part of it is processed into sugar. For the rum production the by-product molasses is important, whereas for the "Rhum Agricole" the freshly pressed sugar juice is used. Since sugar cane grows again and again without problems, the plantation can be harvested up to 8 years in a row. When you buy rum, you are thus supporting a sustainable approach. To avoid the formation of bacteria at the interfaces of the freshly harvested sugar cane, the harvest should be processed quickly.

 

During fermentation, sugar is converted into alcohol and carbon dioxide with the help of yeast. This is a crucial step, because it is precisely here that the foundation is laid for the taste of the later brandy. The yeast creates the important flavor substances aldehydes and esters during the fermentation process. That's why it makes sense not to rely on the quality of ready-made industrial yeast, but to choose from a selection of 700 different yeast varieties and to grow your own yeast strains. We want you to be able to buy only the highest quality rums. The duration of fermentation also plays a crucial role in flavor development. With turbo yeast, which is mainly used in industrial production, the fermentation process takes only a few hours. When using proprietary yeast strains, the process is only completed after seven days. Since a lot of heat is generated during the conversion of the sugar, the fermentation must be permanently monitored. Excessively high temperatures can cause the yeast to die and thus cause the fermentation to end prematurely. A weak mash would result, which could only be further processed into an inferior rum. However, no one wants to buy a bad rum. For this reason, one uses an open vat or a closed system in which the molasses can be fermented. Here, a constant temperature of 30 degrees Celsius must be maintained. An advantage of the closed vat is the longer fermentation time. Unfortunately, this cannot be well controlled in the closed vat. In the open vat, the situation is exactly the opposite.

With 6 to 10% alcohol content, the sugar wine produced during fermentation still has far too little alcohol content. If you buy rum, the alcohol content is at least 37.5%. This only changes with distillation and the associated removal of water. Pot stills in the typical bubble shape or column stills/Coffey stills in column shape are used as stills. The same basic principle applies to both processes: water only boils at 100 degrees Celsius, alcohol already at 78.3 degrees Celsius. The fermented liquid is heated until the alcohol evaporates, condenses and returns to a liquid state. This process alone produces a very high-proof distillate. To increase the alcohol content even further, rum is often double distilled. Due to the different boiling points of water and alcohol, specific desired flavors can be distilled out and others separated. In this way, a wide variety of rums are created, so that everyone can buy a rum that suits their personal preferences. Pre- and post-distillation are separated from the middle section, with the middle section being used for rum production.

It is only through storage that the distillate becomes rum. The spirit is stored in barrels and matures into a brown or white rum, depending on the barrel. People who buy rum usually tend towards either one or the other - depending on their taste. If the distillate is stored in a steel potion or a wooden barrel, white rum is produced. The storage lasts at least three months. If the rum gets a brownish color, it is then filtered with charcoal to achieve the desired white color again. The usually typical brown color of rum is obtained by storing it in oak barrels. These barrels contain the two substances sugar and vanillin, which are activated by the burning out or "toasting" of the barrels and pass into the rum during storage. The knowledge that storage plays a major role in the quality of rum also comes from the Royal Navy. It was discovered that rum rations tasted significantly better at the end of long sea voyages than at the beginning. This finding is now specifically applied in rum production, so that you can buy a rum that is as intense and tasty as possible. For example, storage in wooden barrels ensures the exchange with fresh air and the climatic conditions in the storage room can make their respective contribution to the maturation.

The matured rum is far from being the same as what the consumer will later find in the bottle. The task of the master blender is to blend the rum from the various barrels in such a way that the final result corresponds exactly to the desired taste. The challenge here is that each barrel has its own individual flavor characteristics and requires a great deal of feeling and experience on the part of the master blender. The blender's sure instinct is also required for the creation of new rums. Rum connoisseurs are often interested in buying rums you don't know yet and are happy to try new ones, as long as they are of good quality. The counterpart to blends are the so-called single casks. A single cask rum comes from a single barrel and is bottled without further blending. With these rarities, the master blender does not have his hands in the game. What the rum connoisseur finds here is a specialty whose taste is due to nature. People who buy this rum wants to enjoy the purity of the particular variety. A special blending method is, for example, the so-called Solera process. Here, young rums are stored above older ones and also blended with them. The final product, the solera blend, is taken from the soleras, the wooden barrels stored at the very bottom. The age is determined by the youngest part of the blend.
