EVO Fumo is a grappa riserva with a strong character that combines Italian distillation skills with an unusual smoky note. Made from a multi-layered cuvée of different grape varieties - including Manzoni Bianco, Glera (Prosecco) and Cabernet Sauvignon - the result is a highly complex distillate with unique depth. What makes this grappa special is the innovative use of peated marc, which is treated before distillation and gives the distillate a peaty, smoky dimension that is otherwise only known from the world of whisky.
Maturation takes place in a selection of different barrel types, including toasted oak, which further enhances the aromatic complexity. Although Italian law allows grappa to be described as a Riserva after at least 18 months of ageing, distillates aged for up to 4 years were blended for the composition of EVO Grappa Fumo.
