Nach der Ernte der Zitronen werden diese geschält, wobei die Schalen für die Mazeration beiseitegelegt werden, während der Saft die Basis für die Limonade bildet. Die Zitronenschalen werden anschließend in Wasser destilliert, wobei eine kleine Menge Oliven hinzugefügt wird. Dieses Verfahren ermöglicht die Extraktion der ätherischen Öle und Aromen der Oliven, die der Limonade ihre subtile, unverwechselbare Olivennote verleihen.
