Casamigos Mezcal Joven is made from 100% Espadín agave from Santiago Matatlán, Oaxaca, the mezcal capital of Mexico. After harvesting, the agave hearts (piñas) are slowly roasted in earth pits with wood and lava stones for four to six days to develop the typical smokiness. Fermentation takes place for up to eight days with natural yeast before the distillate is distilled twice in copper stills. The mezcal then rests for 30 days to harmonize its aromas. Before bottling, it is brought to a drinking strength of 40% by volume with mountain spring water.
